The fields at Flying Ace Farm continue to produce! This month, we had our third harvest of 65 acres of Bloody Butcher Virginia heirloom corn.
A Little Bit of History:
Dating back to the mid 1840’s, Bloody Butcher corn gets its name from its resemblance, when milled, to a bloody butcher’s apron. This Virginia heirloom variety grows 10-12 feet tall, reaching upwards of 15 feet and produces 1-2 ears per stalk. Classified as a dent corn, it is open-pollinated (carried by the wind), hardy and drought tolerant. Although lower yield than conventional varieties, Bloody Butcher is an artisan corn that lends an unmistakable flavor profile to the products we produce. Traditional GMO corn typically yields 135 bushels per acre, whereas Bloody Butcher yields around 70 bushels per acre. Flying Ace Farm believes that higher quality, more wholesome ingredients equals better bourbon.
Bloody Butcher corn has a higher protein and a lower starch content than commodity corn and the depth of its history can be found in its taste. Combined with malted barley and wheat, this three-grain recipe creates an interesting, fruity flavor, with lingering undertones of banana bread and kettle corn.
From Farm to Bottle:
Over 1500 pounds of Bloody Butcher corn goes into every batch we make, and produces roughly two and half barrels of bourbon. Our bourbon will age for approximately six years in new charred Virginia American Oak barrels. It is during this process that the bourbon will gain over 60% of its flavor. You don’t have to wait six years to sample this whiskey right off our still. Stop in to try Flying Ace’s White Dog Whiskey, before it embarks on the six-year journey to becoming Flying Ace’s Farm to Bottle Bourbon.
Flying Ace Farm dedicates itself to continue this Virginia farming tradition by growing, harvesting, and producing Bloody Butcher corn on our farm in Loudoun County for years to come. By doing so, we hope to preserve its historical integrity while offering it in the form of a bloody good bourbon. As we continue to expand into Monk’s on the Farm, keep an eye out for other products made with this heirloom corn.

With our Apple Beer, we attempted to create the best of both worlds by combining a pilsner recipe with 300 gallons of fresh-pressed apple juice from Glaize Apples of Winchester.
The Perfect Farm Fresh Fall Beer
We created a bone-dry, slightly spiced, warming Apple Beer that still has that fresh-pressed apple taste, perfect for fall weather. This beer was hopped with Amarillo to balance out the sweeter flavors of the malt and juice, and we spiced it with cinnamon, ginger, nutmeg, and allspice to complete the flavor profile.
This hybrid beer comes in at 5.5% ABV and 16 IBUs and is dangerously delicious. Cheers!

FLYING ACE DISTILLERY WINS SILVER AND BRONZE MEDALS AT 2021 NEW YORK WORLD WINE & SPIRITS COMPETITION
LOVETTSVILLE, VIRGINIA (October 20, 2021) – Flying Ace Distillery Blended Bourbon Cask Proof was awarded a Silver Medal. Flying Ace Distillery Silver Rum was awarded a Bronze Medal. In the Competition’s eight-year history, the New York World Wine & Spirits Competition (NYWSC) has established itself as one of the most respected judging events in the eastern U.S.A. The judges are among the wine and spirits industry’s most trusted authorities, not only on the subject of quality wines and spirits but also on the regional tastes and trends that drive the wine and spirits markets.
Robust Competition with Supreme Judging
Throughout two days of highly controlled blind tastings, the experienced judging panels taste every product to decide if it is medal-worthy. While tasting, judges evaluate each product on an individual basis—not compared to other entries in the flight. During this stage, judges determine which entries are worthy of a Gold, Silver, or Bronze medal.
The reputation of competition is defined by the quality of its judges. At the New York World Wine & Spirits Competition, the judging panels consist of the most respected, experienced experts in the wine and spirits industry. Our judges range from renowned writers and well-known New York City mixologists to esteemed beverage buyers, including Anthony Dias Blue, John Oliver, and Aimée Lasseigne New.
Flying Ace Distillery Reaching New Heights
“We are honored to accept these awards at this year’s New York World Wine & Spirits Competition, says Greg Moore, master distiller at Flying Ace Distillery, “We are extremely proud and excited to receive this acknowledgment from the New York World Wine and Spirits Competition of our team’s efforts here at Flying Ace. We strive every day to not only produce delicious, top-quality craft spirits but to also promote Virginia Agritourism, Agribusiness and of course Virginia Distilleries.”.

The team at Flying Ace Farm has wide and diverse professional backgrounds. Greg Moore, a local of Loudoun County, brings a wealth of experience to the distillery operations here at Flying Ace Farm – and we know you would benefit from learning a bit about him. So, check out the following bio on Greg, and be sure to say hello at your next visit.
Bio and Professional Background
Born and raised in Loudoun County
Worked on several local farms as a teen, including a few in Lovettsville
Attended Pennsylvania College of Technology 1999 – 2005
Graduated with Bachelor’s degree in Automotive Management Technology and a minor In Race Car Construction
2005, Moved back home and married my high school sweetheart, Jennifer Worcester in 2006 and eventually added 2 boys to the mix.
2005- Started as Shop Manager at Fastlane Emergency Vehicles, where we upfit specialty vehicles for local and Federal Gov’t agencies.
The Shift to Distillery Operations
– 2011- Started working at Catoctin Creek Distillery, sweeping floors and giving tours for free at first. Eventually, after a couple of months, earned a full-time paying position as a Production Assistant. After a few short years, I earned the title of Distiller, under the direction of Chief Distiller, Rebecca Harris.
– While working for Catoctin Creek our business and products received numerous awards, here https://catoctincreekdistilling.com/about/awards, including two Double Gold awards. One for our 80 proof Rye Whisky at the 2018 New York World Wine and Spirits Competition and one for our Cask Proof Rye Whisky at the 2017 San Francisco World Spirits Competition.
Enter Flying Ace Farm
– 2020- Hadi Akkad, Pete Thomas, and Brian Jenkins offered me the position of Chief Distiller at Flying Ace Farm, where I oversee all distillery operations and have been given the opportunity to make a delicious Bourbon from Bloody Butcher corn grown right here on our farm. It was like leaving the nest and coming home at the same time. I love these people and I love this place. Coming to work here is like coming to work at the Willy Wonka Whisky Factory.
Freedom to Craft and Create
I fell in love with the craft distilling/spirits industry for so many reasons, it’s a fun mix of art meets biology, meets mechanical engineering, meets flying by the seat of your pants. One of my favorite quotes about this industry is “This is where we f#@k around and find out” ~author unknown. In other words, we have the freedom to try different things that don’t necessarily conform to the industry standards of the big guys. We get to play more but we also have to make a product that can compete on the shelves with the likes of Bulliet, Buffalo Trace, and so on.
Another aspect of this industry that I can not overlook is the people. The people that own and operate these small distilleries come from all walks of life but the thing that all of them seem to have in common is the comradery and mutual respect for one another. We are all willing to help one another out and give each other advice when it’s requested even if it happens to be coming from a competing distillery.
I have had the good fortune of working for and with many of these people over the past 10 years and have forged numerous life-long friendships as a result.

Introducing Pumpkin Pie Brown Porter – 5% ABV – 20 IBUs
It’s the season of Pumpkin Spice and we’re in full swing here at the farm. We’ve crafted our Pumpkin Pie Brown Porter to tantalize your taste buds and get you your Fall favorite fix.
Over 100 pounds of Pie Pumpkins, locally sourced from Loudounberry Farms, were roasted on our farm and tossed into the mash. In addition, we spiced our beer with a blend of cinnamon, ginger, nutmeg, clove, and allspice to complete the Pumpkin Spice flavor and compliment the sweetness of the roasted gourd.
This beer is spooky good at 5% ABV and is a suitable replacement for your morning Pumpkin Spice latte. Cheers!
Locals Supporting Locals
We are excited to partner with the family at the Loudoun Berry Farms to create another seasonal favorite – come on out and taste the difference freshness makes. #localsupportinglocal

To all of our 5,000 guests, partners, musicians, and volunteers who made up our 1st Annual Oktoberfest on the Farm, we would like to say danke schön! We are excited to share images of this kick-off tradition here at our farm in Lovettsville.
In addition, the Town of Lovettsville provided the Weiner dog race track, with Vice Mayor Chris Hornbaker refereeing, Wes Boucher emceeing, and Ryan Hornbaker and Lydia Sturrock assisting in the races. Including the support from 1836 Kitchen & Taproom who hosted the Weiner dog weigh-in on Friday.
A few partners, that made the weekend great:
Guests enjoyed German fare by The Polished Foxx, delicious beers brewed on-site, and Lovettsville’s annual wiener dog races! Guests had the opportunity to participate in stein hauling and stein hoisting contests while listening to Blaskapelle Alte Kameraden Band (a 9 piece polka band) as well as the community sing-a-long of Bohemian Rhapsody by Ghost Pepper Band introduced by Lovettsville Mayor Nate Fontaine.
A special thank you to The Hive Bakeshop in Brunswick for making our cookie necklaces for the Weiner dog races, stein hauling, and stein hoisting races as well as providing us with our very own spent grain dog treats.
We added a few new brews just in time for Oktoberfest weekend including Marzen Bier (4%ABV), NEIPA (Military Hop, 6%ABV), and Virginia Farmhouse Saison: A Virginia Brewers Guild Collaboration Beer (5.15%ABV).

Virginia Farmhouse Saison: A Virginia Brewers Guild Collaboration Beer (5.15%ABV):
We’ve participated in the collaboration beer in celebration of the 10 year anniversary of the Virginia Craft Brewers Guild and have made our Virginia Farmhouse Saison. This beer has a subtle funkiness and bone dry finish perfect for the approaching Autumn season.
A Collaborative Effort
We acquired Cherokee Purple Tomatoes from Hamilton Hop Farms and roasted yellow squash grown here at Flying Ace Farm and incorporated them into the mash. This brings a slight sweetness from the roasted squash flesh and a very subtle fresh earthy tomato flavor. We also used a Virginia local yeast supplier, Jasper Yeast Labs, and used their American Saison yeast strain that was propagated from a wooden barrel found at an archaeological dig site in Alexandria.
We are proud members of the Virginia Craft Brewers Guild and hope you enjoy our collaborative efforts. Cheers.
